Then, a chicken and leek terrine with pickled vegetables and a tarragon mayonnaise.

Next, a glazed pork cheek with a sweet potato fondant, sweet potato puree, pork crispy.

To finish, mum’s gingerbread, vanilla creme patisserie and candied pistachios.

Saturday:

Start with a lamb ragout on a lamb fat crumpet with mint vinegar gel topped with puffed wild rice

Next, a braised shin of Lakland dexter beef, roasted & salt baked celeriac and straw potatoes.

To finish, a yuzu mousse, white chocolate aero, pine powder & fresh basil.
